Big Tuna Touchdown
In honor of Coach Parcells
5 pounds Yellowfin tuna, cut into cubes
1/2 cup each of blended garlic powder and onion powder with shake of salt and pepper
2 cups of your favorite BBQ sauce
1 cup pickled ginger
fresh cilantro (picked leaves)
 
1. Season the cubed tuna with the blended spice rub.
2. Grill or sear until fish is medium or medium-rare (based on taste preferences)
3. To present, dress each piece of tuna with a dollop of BBQ sauce, a leaf of cilantro and a sliver of pickled ginger on your favorite throwback jersey.

"Steel Curtain" Saucy Skirt Steak
The essential meat of the big game
5 pounds skirt steak (or any beef for grilling)
1 quart ketchup
1 cup red wine vinegar
1 cup orange juice
1/2 cup chopped cilantro
1/4 each of chopped basil and chopped mint
salt, pepper, Tabasco sauce for taste
 
1. Season steaks with salt and pepper and grill. Slice into strips and skewer on steel rods.
2. Mix other ingredients into a sauce, and then brush remaining ingredients over finished steak slices.
3. Present skewers on "Steel Curtain" rod base or electric football game board.
