the CUTS

CHUCK (BIG EAST)

There are some tasty strips for those willing to try, and it will fill you up, but it might be best ground up for a tasty burger

BRISKET AND SHANK (ACC)

A tough cut, but when it's good, it's delicious. The lower-ranked shank looks good on the bone, but it's difficult to swallow

RIB (SEC)

The top of this cut is prime rib, well marbled with great flavor and texture, as good as it gets. The lower sections can be fatty but still offer treats like short ribs

FLANK (BIG 12)

Long, hardy cut that's not fancy but produces lean and sturdy staples. The meat in "meat and potatoes," upon which the heartland was built
